Vickie’s Jerk Sauce
Growing up in the 60’s in Rockfort, Jamaica, was what I considered to be the boot camp of me evolving into a master culinary artist. As the youngest girl of 14 siblings, I had to learn my way around the kitchen from a very young age. Understanding the spices, how they complement each other and learning how to infuse those flavors into the foods is integral to creating traditional and flavorful Jamaican cuisine.
This was the technique I used in the 1990’s when I established my Brooklyn, New York restaurant, Tropical Paradise. Tropical Paradise’s food was renowned for its authentic and flavorful foods. However, our signature dishes were the jerk fish, jerk pork and jerk chicken dinners. To accommodate the high demand, it was at this time I decided to bottle my trademark jerk recipe.
